I'm an assistant manager at a 300 room hotel located in Manhattan's east side. We have one restaurant and we are making an average of $900 a night and most nights the place is dead. Any suggestions on ways of increasing business? |

People go where there is great food with great music and a great atmosphere. Maybe consider changing your menu and pricing or both and changing the descriptions of each entree. Maybe consider a buffet or a mini-buffet on certain nights. Not knowing your hotel class, or community very well nor your budget, consider hiring a DJ, or an aspiring young band, or a karaoke night may liven up the place, maybe an aspiring comedian, or a magician for a family night. Have theme nights with some sort of entertainment. If you can't afford the cost to hire entertainment consider a cover charge and make sure you advertise well and a lot for maximum exposure. Make sure the decor is up-to-date and there are no old musty smells in your dining room, if so, rent an Ozone machine and zap the odors. Most people congregate where it's fun and exciting, but if the food and pricing isn't great then sales decline. You can have great food but the atmosphere is awful, or You can have great atmosphere but the food is awful, or You can have great food & great atmosphere and it's boring; and a restaurant without all of these combinations will not do well. Maybe consider a business consultant coming in and revamping your target market. Good luck! |

Can you talk to your marketing dept. and see how the hotel is marketing itself to businesses for meeting and such? How about in-room advertising and menus? How's the decor in the hotel and restaurant, does it need to be updated? How's the food, the service, etc...? Are you on the cutting edge of NYC's cuisine? How is the chef and line? Can marketing do advertising or specials to get more people in there?
$900 a night is awful small. I'd look at every facet of the hotel and not just the restaurant.

Put ads on the guests rooms door handles about the same size as the Do Not Disturb signs. Include a simplified menu or a special, make it seem like a deal. Have a theme and stick to the basics - quality. |

It would probably be to your advantage to find a Mentor in the Restaurant/Hotel industry.....
The hotel may have issues you are unaware of because you are too close. (ie can't see the forest because of the trees).
That's not a put-down. On the contrary, it happens to all of us. We all have blind-spots.
Your question has got you 1/2 way to finding a solution. Keep going! Don't quit until you get the info you require. |

There are several ways to increase business in a local restaurant. The easiest is to host an event for all of the lcoal food critics, or begin heavily within large groups. What type of restaurant? If it is food that is big with teenagers....drop by the parking lots of the schools. If you are looking for adults tap the PTA meetings etc. There are too many ways. Would love to help .. |

Hi there, you should review your competitors on the market. All hotels in your sourrounding area should receive a competitor analysis in terms of food offered to what prices. If you do that, find out how your prices compare to those you have in your restaurant. Find also out where your hotel guests go when they leave the hotel for the evening. A hotel of that size should have a concierge, he should be able to tell where people go to dine. Analyse those restaurants as well. If you have theaters in your area, provide a pre theater menu for guests that want to eat before they go to the theater or live event. Use concierge or reception team to upsell the restaurant. Ask GM to incentivise Concierge or reception for upselling bookings. Don't forget that reception staff doesn't get much if any tips so a bit of extra cash can motivate them. Offer early diners something extra (bottle of wine, glass champagne) if they come to eat earlier. Bare in mind that a restaurant thats looking full before peak time, attracts more people to consider dining in-house. There are many more ways to attract more people but I haven't seen the menu so can't judge on that. Hope that helps. If you have any more questions, contact me. |
