If you included it as part of the name, such as "Jumpin Vanilla Puddin", otherwise, no. If you have an product explanation on the box it should use the correct wording so "pudding" would be right.

No, I think it's fine. Better marketing would be to add some adjectives around it. "Rich homemade pudding" for example.
