It's a root vegetable...related to the radish, but bigger. The most common way you'll see it prepared is pickled..you've probably seen them in salad bars. In Russia, they make a soup out of it-it's called Borscht. They're okay...as a child, I'd eat 1 and only 1, if it was served for dinner....as an adult, I haven't rushed out to the grocery store to buy any-but if it's being served, I'll be a good sport. |

It's a vegetable which is very hard to cook by itself because it loses a lot of red color. They are also available pre-cut in the canned section. Yes it doesn't taste that good. But there are some good properties to it.
The sweet taste of beets reflects their high sugar content making them an important raw material for the production of refined sugar; they have the highest sugar content of all vegetables, yet are very low in calories.
