I have a co-worker who is more experienced than me and has been around longer, but who is not in any way my supervisor or in a position of authority over me, and has taken it upon themselves to give me assignments they can't handle themselves for time reasons. I am swamped myself but I can't go to my boss because he has been out of the office with a family illness for months. How should I politely or otherwise tell my co-worker that they don't have the authority to assign me work and that I have plenty of my own to do without looking like a diva?
Is he dumping work on you, while doing nothing himself?. If your boss has been out of the office, he may just stepping up.
Ask yourself these questions before you do anything.

I'd say tell them nicely you cannot do his work as you have to complete your own. If they persist, that was good advice to say no. Be firm and they'll back off. If they don't, just keep saying no. It's about being strong and showing them they can't get away with it-setting your boundaries.

Tell him straight out that your swamped w/ your own work & just tell him when your finished you can help him out, other than that I don't know what to tell ya!

Just tell your co-worker! Tell them that you can't do all the work for them and that you are busy enough as it is. Or just don't do it just say that this is your work and i am tired of doing it for you. So can you please do it yourself!!!
