for emergencies . years ago( back in the 70s ) i worked in a 7/11 ..........and we would lock up for twenty minutes while we mopped and polished the floors .
in the past denny's didn't have locks on their doors , then they decided to close for a few specific holidays , they had to install locks at all locations .

So people don't rob them in case of an emergency or holiday. Just in case there is only one person working and they have to go the bathroom. |

One good reason is that when they were building it, the store was full of stock that could be stolen way before it was actually open for business. But also the store may have to be closed periodically, even though unintended, during emergencies. |
