Always try to ask open ended question. This will make the interviewee elaborate on his or her answer.This helps you avoid getting prepared answers.

My favorite set of questions for a quick interview are:
1) How do you see yourself 5 years from now? (gives you a chance to see the persons self esteem, vision, planning etc)
2) How would you describe in detail your present boss? (gives you an idea of how he or she is with work relationships, taking the good and the bad qualities of a co-worker)
3) If you had to stay at your present job what changes would you make in order for you to be more effective at work? (will give you an idea of how accountable the person is, because people normally look for scapegoats, when everything they need to be more effective at work is right there)
