Starbucks does NOT have rights to the word star, nor to the word buck. The folks at Kraft, a few years back, tried to clobber a competitor to "Miracle Whip" that used "Whip" in their name, and the courts spanked Kraft and made them go to bed without their supper.
"Coffee Stars" would be a reasonable name.
So would "Coffee 4 A Buck". Oops, you probably don't want to sell it for that cheap, would you?
But "Buck's Coffee Bar" would be legit.
If you want to see whether a trademark exists, head to the US Patent and Trademark website. You need to be aware that you get a trademark for a particular category of use. You could register "McDonald's" for welding products or "Chevrolet" for golf clubs or "Heinz" for automobiles, without any problem with the McDonald's restaurants, General Motors, or Heinz ketchup folks.
For instance, you'll notice that there are 222 trademarks for "Buckhead".

Wouldn't suggest you add 'buck' to it, Starbucks attorneys will come after you - hard! It doesn't matter if you started your business before they did. The copyright and trademark attorneys take going after small coffee companies who come close to using 'star' or 'buck' in their names seriously, have done this in the past.
How about adding 'java' instead. Just a heads up because it's not worth the pain and expense it's going to cost you to go head-to-head with Schultz.
