That people can get really nervous, so be gentle. You rarely see the true person in an interview.

open availability. If you are looking for set hours then it is different, but make sure they don't want to change their schedule once they are hired. A good tool my job uses is a signed form of availablity. Then if they want to change it, you have documentation.
Also, ask if they have any vacations planned or need time off in the first 30 days.
