My mom introduced me to Smart Balance...and I use it in place of margarine. I use olive oil instead of normal oils..it's bettter for you, I believe as well.
Do *not* try the Smart Balance Popcorn. It was almost as bad as that tofu hot dog I attempted to eat once.

my mom use's crisco and margarine together like split it half and half like if its one cup of butter, its 1/2 of crisco,1/2 of margarine.so use both we dont use oil cause it makes the cookies to oil.

You can use applesauce. I've never tried it personally, but there seems to be a lot of suggestions on the web. One account said to substitue...so 1/4 cup butter = 1/4 applesauce.
