What is meant by employement policies?
Does it also cover working time policies,equality policies, health and safety policies etc.

Simple language.
The rules of the company which involves many situations such as
sexual harassment
attendance/absenteeism
dress codes
fraternization with company employees
Raises based on their criteria
Bonuses or cost of living pay raises
health and dental insurance
safety policies
dress code according to job function.
compamy parking area.

It just covers anything that they expect from you to keep your job.
Usually your given a hand book to explain these policies.

Well a good definition would be that the policies define the conditions under which you would be employed, the times you would work, overtime requirements, conduct on the job, pay scale and raises. ALso sections about injuries, damages, recial and sexual behavior and your obligations to the company, which may include a non disclosure agreement.
Reasons for dismissal.
They define the realtions between you and the company and with other employees

It sounds like what in the US we would call an employee handbook. It should cover the rules, policies and expectations for: vacation, holidays, benefits, company mission, leadership, health care, retirement plans, confidentiality, non-discrimination, health, safety, sexual harassment, etc.

well. that would be the rules. That they use to choose employees. its not discrimination. its a matter of if the person can do the job. Such as my job. if I couldn't do math. I could not do my job. I some one hires a person. to do a job they have to be "qualified" to do that job.
some times the "policy" might say. you have to have a car. Why because they need to know that you can get to work every day on time. lets just say. you have a job. as a security person. and they need to know you can be there to unlock the doors for every one else to get in. To do there job. they can't afford to hire some one. Who they think might be late. lets say your a school bus driver. policy says. you have to have a "public passanger" drivers licence. it just means a list of things that you must qualify for , to get the job. policies= rules.
"we have a rule" that says. ......"we have a policy" that says....... you have to be able to drive: if you want to be a taxi cab driver.

It lays out everything that the HR dept. must do when hiring someone such as background check, reference checks, how to handle those with disabilities, training required, etc.

The employee handbook is what they will give a new employee that will define benefits, dress code, hours of work, vacation and the like.
