If you can qualify as a non-profit you don't have to pay tax, receive special considerations in some bids, and can use the designation in your marketing materials.

There are a lot of rules around how you can spend the money that your non-profit makes, however, so depending on what the intent of your “company” is, it might make more sense to become a “normal corporation”.

Not for profit means that you're not making profit and you don't have to pay corporate taxes, however people on the payroll still have to pay income tax. The appropriate type depends on the intent of your organization.

If you are going into business to make money then you would incorporate or use any other form of ownership (sole proprietor, partnership, LLC etc.)
A not for profit organization is just that - an organization, not a company. It is for groups and associations who must handle and account for money, but are not in the business of making money.

Non-profit or tax exempt organizations can still be subject to corporate income taxes on their unrelated business activities. These are activities that do not satisfy the exempt purposes of the organization. This was to place non-profit entities operating a for-profit activity on equal footing with regular businesses thus eliminating the unfair competition aspect.

If your organization has no intention of making a profit, such as a convention, school, social club, then incorporating as non-profit means

* microscopic government interference

Consider the protections of a corporation ... you have volunteers in your organization who do stupid things. Without incorporation, ALL members of the organization can be sued. For example, at one club meeting, an adult serves liquor to minors. All members of the organization, including people who were not even at the meeting, are at risk of going to jail for contributing to the delinquency of minors. You hold a convention and it loses a lot of money, because some volunteers did not know what they are doing. Thousands of dollars have to be paid, by all the members, including those who voted against the stupid stuff being done. But if you are incorporated, then the participants are protected from the legal consequences of stupid stuff by other members.

Now consider government interference.

Incorporated for profit are bombarded daily by government forms to fill out.

Census ... what are the statistics on the products you make, money you spend on research, numbers of employees with medical expenses ... this goes on and on and on. You fill out the forms to best of your ability, saying stuff like NONE NONE NONE NONE to all the boxes because none of the stuff is relevant to your business, then a month later you get the same form back, with the government complaining it was not filled out properly ... so after going around with that a dozen times, some government person calls on the phone to ask questions about the form, then tries to argue with you with respect to what official at the company should have filled out form where the instructions to fill out form said none of that.

Then there are all kinds of taxes on employees.
You think deductions on your paycheck are bad?
Multiply that by 10 different kinds of taxes the company has to pay, put in special bank accounts for the government to deduct from, send forms explaining how you calculated the taxes. The government often screws this up and it is your fault to fix their screw ups.

There is just an endless supply of government paperwork bombarding for profit corporations. None of this if you are a not-for-profit corporation.

All you have to do is file a set of annual returns with the state government and the federal government.
