She wants you to rotate the stock. You put the old stuff in front so it gets grabbed first. When I go to buy something, I always un-rotate it, and grab the stuff off the back. One time the local Stop&Shop tried to fool me by putting the new stuff in front. I saw through their trick and took it off the front.
A consumer has to be aware of stupid store tricks like this.

Check the shelves. You'll find stuff on there that's past the sell-by date. Take that off.
Then check what's left. Put the stuff with the closest sell-by date to the front, stuff that will last longer to the back and fill the gaps behind it all with fresh (even longer-dated) items.
If it's a fridge in a bar, similar principal. You just need to move the already-chilled bottles from the back to the front and fill the gaps behind with warm stuff fro non-refrigerated stock. The idea's to give the stuff at the back time to chill as you sell the bottles/cans in front.
