First I will say that it depends on the company. There is a medical exam that has to be done in most instances. That usually depends on the insurance company and the face amount of the policy.
If it happens to be a company/face amount that does not require a medical exam to be completed, it is illegal for you to sign her name. If the company finds out, there is a possibility that you can go to jail.
An insurance agent should be making sure that the actual insured is signing the application. They are supposed to witness it.

It would have to be a very small insurance policy, for "life Insurance" pretty much requires a physical in order to sign on. |

It may be possible but I do not think it is legal. If you did sign your wife's name it would be with the presumption that she knew and gave you permission to sign for her. |

Not if she's legally competant. If, however, she's declared incompetant, her guardian can sign off on the policy and she doesn't need to know about it. |
