In this case, 2 things are needed. Insurable Interest (which you have as the child) and their permission (sounds like you have it).
As many others have said, they just need to sign off on it and submit to any exams and your good to go.

Yes it is. If you have an insurable interest, which you do in your parents, you can get a life insurance policy on them. You would NOT be able to get a life insurance policy on the people who live down the block because you do not have an insurable interest in them.

For you to take out a life insurance policy on your parents? No. It's against insurance regulations for one and secondly why is your dad asking you to do this? He should just get his own policy and list you as a beneficiary.
