nearly, but subject to exchange of contracts netween buyer and seller, then it is final.

No. The contract is everything. They are signed then exchanged up until that point, a buyer can pull out.

A house can be advertised as 'sold subject to contract' as soon as your offer is accepted..... but anything can happen between then and exchange of contracts.

That isn't quite the terms we use in USA. If you have a contract to purchase your home, but it is "subject to", say an inspection, then you have a valid contract. Should the inspection find something serious, then the contract can become negotiable again, or the buyer can withdraw.

No contracts need to be signed and exchanged. Then you can move to completion when keys are handed over.

The term sold subject to contract is meaningless as you can still be outbid if the seller accepts.

No. It doesn't really mean anything apart from you have accepted an offer. That signature on the contract means everything. Either side can pull out at any point up until then.

a house is sold as soon as the contracts are signed in the UK anyway, as people do pull out at the very last minute
