Totally depends on the job and the level of responsibility I need.

For entry level, I look for a few things:

1. Desire to learn
2. Questions they ask me
3. Do they speak professionally without use of slang?
4. Are they bright enough to dress nicely and arrive early?
5. Do they have any work experience at all and is there a reference (beyond the standard date of hire, rate, title)?
6. Persistence

For more experienced applicants, I look for all of the above, plus career progression (like promotions, greater responsibility), ability to quantify their accomplishments, having made any accomplishments and the desire to help my company succeed, or be more productive.

1. Truthfulness. If there are unexplained gaps in their resume, I'd expect a reasonable explanation.

2. Promptness. I'd expect the applicant to arrive for their interview on time, and be prepared to interview. (No cell phones, no chewing gum, no need to go to the car to get documents that they forgot.)

3. Respectfulness. I'd expect the applicant to sit up straight, look interested, and engage in a conversation, rather than have me have to dig for information from them.

If an applicant could do those three things, I'd likely hire them on the spot.

It's rare that I see an applicant like that.

That would all depend on what I was hiring. What I would look for in a retail sales clerk is very different than what I would look for in a funeral director. The skills to be a pastry chef are very different than those of an auto mechanic.
