as long as you use a social security number or tax id number the IRS will always know. Best thing you can do is when people pay you by check either go to their bank and cash the check or go to one of the local check cashing stores. |

Reality is this. If you are ever audited and the IRS thinks you committed fraud (which is what you are suggesting) then they could file liens against your bank accounts.
Many IRS liens are filed by county and go to all banks in the area, so they could catch you that way.
Or if the bank is audited, or one of your customers.

The bank reports it all. Not only know about it, seize it if they choose. Anything that involves paper is subject to IRS scrutiny and control. If your employers deduct their cash payment to you as a business expense, potentially, they may ask, where did you declare the income from the deducted payment.
One question to ask yourself. If you receive the protection of the US government, why refuse to pay for it? If you feel the government wastes money, elect other people who will not waste your money. |

The IRS knows about any account you open with your SSN or EIN.
Any check written to you personally can be cashed at the bank it is drawn from - regardless if you have an account with them or not. They will not have your SSN at the bank if you don't have an account there, hence the IRS will only know if you tell them or if you get 1099 from the company paying you.
