How do I know when I've hired a good employee?
We are opening a restaurant (with experience). How do I know that the applicant I've interviewed will be a long term employee? What sort of questions can you recommend that I ask?

Past employment history is a good start. If this person is a job-hopper, you can be fairly certain he/she will leave your employment as well.

Goals and ambitions are another factor. If this restaurant job is just a way to make money until he/she graduates from school, then you have to have that understanding.

Finally, please be realistic. Restaurant jobs aren't long-term careers. Chefs hone their skills and then trade up whenever they can. Servers, cooks, bussers, etc... go from one place to the next. It's very common for the industry.

The only thing you can do is trust your instincts and check references. If they job hop, then more than likely they'll job hop on you too. If their track record shows that they stay put regularly, then they'll probably stay for you as well, as long as you treat them well.

Ask about their past experience. If they held jobs with other restaurants ask how long they were there and why they left. Also ask about their long term goals. Where they see themselves in 10 years.

There isn't a set formula and you can only use your gut instinct in evaluating how truthful their answers are.

You cannot know that up front, it may take some time to actually find the right person. I ran a large restaurant in downtown Mtl for years and the people that I hired always surprised me. The ones that stayed for long periods and were trustworthy and hard working came in all shapes and sizes and ages and groups.

The most common thing I found is that an interview can never tell you what you want to know.
Neither can asking questions of the person. No one is themselves in an interview, they mostly seem to want to say the right things to get the job. Since they are strangers you do not know them personally, so you cannot figure out when they are being honest with you.

That's why many employers have probationary periods to understand how things work out with their newly hired staff. If they do not work out, you find someone else quickly from your list of applicants.One of the things I have noticed recently
is in areas such as fast food and coffee shops there seems to be a predominance of middle aged or older women. Seems that the statistics are such that they work harder and are more dependable than some.
There is less going on in their lives, less distraction, no children to take care of etc.. less social life than someone younger so, unless they have a health problem they usually actually want to work. I would suggest that you consider these statistics if you are looking for a long-term employee.

You don't. Treat them nice and with respect, then you will find out. Treat them like they are leaving in 3 months, then they will.

since most restaurants pay very poorly having long term employees is very unlikely but I'd make sure of these things:

Do they live nearby? married? rent or own?
do they have ambitions to be a manager? if they do then they'll likely be to power hungry to stay in a restaurant.
spouse makes a decent salary? (don't ask for the salary, just the kind of work they do)
age 23+ but becareful cause you can't discriminate.

The best way to to see if a person will be long term is to see how many jobs they had in a certain amount of time. If they have had 3 or more jobs in a year, it's safe to bet they wont be there long if the opportunity arises.
As for questions..you could ask a ton a questions and still get the wrong person. You would have to use the probation period to evaluate them.

For a restaurant, make sure that they have no higher aspirations. If the person is planning to pursue a degree, or anything that requires acquired skill, that person is less likely to stay long term working at a restaurant. You must hire someone that has no hope of achieving anything greater.

you won't know if you have hired a good employee. But one thing you should do is. Random drug test. Do a drug test when they before they are hired. then do it randomly. if they really want the job and are loyal to it they woundn't do drugs. and I'v seen some of the emlpoees you have had. Good luck, god bless and I will be praying that you find the right people. You could also enforce a call in policy. If some one calls in sick they must show proof with a dr's note. since that is the most common call in excuse.
