Our cash bar business is vulnerable to employee theft..although we have many reconciliations in place, theft still occurs and the employees don't pay attention to our system of cash to inventory set up and still find ways to contaminate the cash drawer, e.g. cashing tips in, making change, etc....we need help....... |

What we did in our retail business is simply assign a duty cashier for the day or even a few hours. The hand over cashier will count and verify the til in the present of the floor manager and secure the correct amount for the accountant/book-keeper the next day. While the taking over casier will start the til with a new cash float / fresh til.
The responsible cashier is held responsible for any unbalance til and they will have to answer to it by topping up. This had taught my staff that they are responsible to the revenues of the company.

How about install cameras over all the registers, fire all the thieves, and do background checks on everybody you hire. |

First of all Hire a good Finance Manager
A good suggestion from above answer, insert Cameras near cash counter.
Try, if u can, hire some of ur relative, brother etc, or person whom u trust.
If u found any employee involved in theft, try to set some example. Fire him/her or some financial punishment etc.
Make a single cash counter. |

Cameras and cameras with no tape but that are sent to a computer off premise and stored on a hard drive . That way an employee can not snatch a CD or tape to cover his/her tracks . |

Security cameras, training, money drops... it won't eliminate the problem, but it will help you manage it.

How much are you loosing? Take that amount and pay Managers to watch the place. You have alot more than dipping into the till going on-trust me. You have to protect your investment... |

depends on your budget, medium budget use computer system to track all transaction,so you'll have daily report.. or lower cost budget by using computer cash machine.. also can print out reports every night or closing time.
if you have extra time & money, then audit all stocks & hire a finnace accountant |

Message: we have cameras (although not directly on the til), cash inventories (balancing cash to inventory) float accounted for in an out, directions not to cash tips in during their shifts, reconciliation of inventory from one shift to the next, handbook defining all of the above, plus verbal communication with staff when not on site
Well, do you know who is stealing, what shifts the money is missing from? Fire those bartenders immediately as an example to the others who were thinking about it. Z or X out your register after every shift change and if the drawer is missing money make it policy that who ever was tending that day replaces the money out of their tips. That was the rule any where I bartended. Put a camera right on the register. Hire a manager that you trust if you cannot be there all the time.
The unfortunate truth of a cash money business is that there is no absolute way to control the cash unless you are the one working. There are only preventative measures one can take to help the situation. But you may need to take a couple of weeks to be there on these peoples butts to insure that they know you mean business. Pop in unexpectedly every once in a while to keep them on their toes. |
