My favorite breakfast places are slightly gourmet and have a European cafe feel. You can do things like add vanilla to the waffle and pancake batter. This adds a great taste... Fresh fruit salads, great pastries, apple chicken sausage... get to know coffee, (Starbucks sucks) Good coffee's such as Peet's, Illy from Italy and many others. Very important to know coffee and how to prepare great espresso drinks. Drinking a latte from a latte bowl is one of my favorite things at my favored cafe...
Such egg dishes like quiche, fritatta, and omelette's are good, and some can be prepared the night before. You might consider take away items too, such as coffee, pastries, coffee cake, etc... It would make you a bit more money and people are not sitting in your dining room requiring additional staff labor...
I live in the San Francisco area, and these things sell in our area... One of the best breakfast places I have ever been is Mama's in the Northbeach neighborhood of San Francisco. check out reviews on Yelp.com.
However, diners in your area might have other likes.
Know your customers and once your business is rolling, ask them what they like or their spending habits will define their likes.
I'd also suggest many food magazines, food channel, and the Internet. Research recipes and try them on friends and do your own taste tests. You can use specials to try new things your thinking of introducing to your set menu.

get creative.. instead of just pancakes, cook the pancake halfway, lay an egg on it, flip it and serve.. eggs, bascon, toast, muffins, crepes, scrambled, the basics but get creative with it |

Delivery on Saturday and Sunday mornings!! It would be amazing if you could pre-order your food for a certain delivery time and have it there in the morning. Maybe have the delivery guy make a wake up call on their way there to make sure the person will be there to open the door if you are concerned about people sleeping in. |

i own a breakfast restaurant, and have for about 12 years. In my experience, the best thing you can do to "stand out" is to offer as much as you can "homebaked". There are two different ways to state that...homebaked: items that are not completely finished and you finish in your place ie; frozen bread balls, you thaw them and bake them off in your place. Homemade: start from scratch, or using a "base". So many places do not offer anything "homemade" or "homebaked"... |
