I assume this question is from the UK? For once the American answers are actually the same, but just to confirm you have to pay the person for all the hours they worked.

Technically you can also sue them for breach of contract for not giving the required notice. But unless they were a mega high earner of critical importance to your business this is clearly pointless and would cost you far more than you would get back.

It depends on their contract of employment. If they were "required" to give notice, you may not be "required" to pay them.

You can check if your State/Province has any labour standards that force employees to give notice. In Quebec an employee does not need to give any advance warning before quitting

we had a few people do this.. they pure lazy some of them... so i will make a mistake in their wage.. then take a month or so to put it right..
even to the point of giving them a drip payment....
lots of people will let you down on the employment side of things...
so theres only one way to deal with it... let them down... if you loose their time sheet. make them fill out another... then pay it short...
they need a lesson... and you need to keep your dignity....
and it puts the message out there...

The employee can go to the state and they will force you to pay for all of the hours he worked. Sometimes if the state has to get in on it, they will force you to pay more than what you owe.

You have to pay them up to the point they left, but if you took a week in hand when they started which is a common practise to prevent people leaving without notice you don't have to pay that back
