I've been doing some work with www.elance.com the past week, all the work is home based, data entry, transcription etc. The only thing is you're competing against people from countries where the hourly rate of pay is a lot lower, so not sure if it would be worth it for you.

Its been updated today to include some Craft type jobs which can be done from home, mainly re-distribution, but it possible to make good money from it if you work hard.

Avon, Mary Kay, Pampered Chef and AmWay - you can do from your home. People are familiar with these products and they offer addition support in the form of local mentors, websites, etc.... The down side is that it will take determination to hit $3k a month.
Medical Transcriptionist...can be done at home...call the doctor's in your area to find one and get the low down from someone doing it. Basically though you have to find you're own clients (doctor's) and it's not easy. You need to learn medical jargon and whatnot - then you have to be able to listen very carefully. Not making any mistakes is very key here.
In Home ChildCare or PetCare....your local state will have a website dedicated to what's required and who's doing it in the area. This is also a struggle - you need lots of patience and a great reputation - very trustworthy.
Selling insurance. You'll have to get an insurance license...usually about a week of study or classes then another week to get the license (mine was just under $400)
Then you pay for your own leads....which can be very very expensive...but then you stand to make 40% of the policy sold. The average policy is $300 a month x12 = sell three a week and clear $5k a month easily. This has to be run like an organized business though or your leads cost will hurt.
