You apparently know that non payment of tax is a crime and are asking about the discovery process.
If you have registered as self employed you will be issued with self assessment returns to complete. Ignoring these is probably the quickest way of attracting the attention of HMRC.
Note that there are automatic penalties for late filing and after a long delay the penalties can escalate up to £60 per day. More importantly, they can "make a determination" of your liability - in other words guess it and I can assure you the guess is unlikely to be too low.
If you are not registered as self employed then the problems will only start when they realise that you are in business. Your chances of escaping the net will depend on the type of business you run but their intelligence gathering units are very resourceful.
If you don't have the money to pay then they will take any assets which may have value and then make you bankrupt. Unlike other creditors they will sometimes do this even though it costs them money and they know that they will not recover anything. |

If you're self employed and it's possible for your customers to find you - it's even easier for the tax authority to find you. They have a much bigger organisation looking for tax evaders than any outfit looking for self employed people.
If you don't pay because you've no money when it's due, you will spend the rest of your life trying to get by on a subsistence level of income whilst anything else you get goes to paying off the tax debt and interest on it. |

The chances are you will get caught. Tax people have their ways. Then a charge will be made for tax, which is likely to be excessive, and you try proving you don't owe it! You will also have to pay interest (they charge commercial rates) and financial penalties.
If you have spent all the money, the first way they will try to recover debts is by valuing your possessions. Tax collectors don't need bailiffs, they can do the job themselves, and will distrain on your possessions. TV, car, whatever, wherever it hurts, they're not fussy. If that doesn't work, it may be Magistrates' Court (if only a small amount due) or more likely County Court. If there is a County Court judgement against you, and you don't keep to it, it is jail for contempt of court. If all else fails, they will institute bankruptcy proceedings against you. You try getting credit in the future if you have a CCJ or bankruptcy! Especially if you want to start trading again. Unlikely a bank will give you a business current account and cheque book if you have been bankrupt.
